Ingredients
4 Halibut fillets (any firm white fish will do)
Salt
Fresh ground black pepper
1 Tblsp extra virgin olive oil
1 can artichoke hearts (drained and quartered)
3/4 cup low-salt chicken broth
1 tsp saffron threads
Instructions
Season both sides of fish with salt and pepper
Heat oil in a large skillet over medium-high heat
Add fish, cook about 2 minutes per side (less for thin fillets) or until golden brown
Remove fish from pan, set aside
To the same pan, add artichoke hearts, broth and saffron, bring to a simmer
Return fish to pan and simmer 2 minutes (or until fish is fork-tender)
