Ingredients
7 pounds Fresh Zucchini (sliced
2 (14 oz) cans of chicken broth
1 medium onion - diced
2 cloves of garlic - chopped
1/4 cup olive oil
Black pepper (fresh ground is best
Instructions
Sautee onions and garlic in olive oil
Add broth, bring to a boil
Add zuchinni, cook until clear (falling apart-ish)
Puree with upright blender (see pic)
Pepper to taste
Option - add cooked broccoli (yummm)
